Panir Pakora (Cottage Cheese Pakora)

Ingredients: -Panir-cut into long strips 2" long 1/2" wide, Batter, Gram flour (Besan) - 120 gms., Clove garlic – 4, Ginger - 1/2" piece, Green chilli chopped – 1, Salt - 1 tsp., Chilli powder - 1/4 tsp., Coriander powder -2 tsp., Chaat Masala - 1 tsp., Mixed Spices - 1 tsp., Mustard oil or cooking oil for frying, Water to make batter of medium consistency, Water to make batter of medium consistency.

Method: - Sift the gram flour in a basin. Make a well in the centre. Gradually add water, stirring, beat well-add the rest of the water, soda and put it away for sometime. Add salt, chilli powder, ground paste of ginger and clove-coriander powder-beat well. Dip panir strips and fry in hot oil. Sprinkle chaat masala and serve it hot with mint chutney. In the same batter add sliced onions. Cauliflower Spinach leaves green chillies or potatoes can be dipped and fried. Cut vegetables, put salt and chillies and put aside. put in a plate for extra water to drain off. Dip in the batter and deep fry. Serve with mint chutney.
