Khumb do-piazza (Mushroom Curry)

Ingredients:

  • 500 grams Mushrooms

  • 150 grams Onions

  • 100 grams Tomatoes

  • 80 grams Capsicum

  • 100 grams Shallots

  • 1 teaspoon Ginger-garlic paste

  • 11/2 teaspoon Red chilli powder

  • 1 teaspoon Coriander powder

  • 1 teaspoon Turmeric powder

  • 1 teaspoon Lemon juice

  • 1/4 teaspoon Cumin seeds

  • 1 tablespoon Coriander leaves

  • 2-3 tablespoons Oil

  • Salt

Method :

Wash the mushrooms with a little flour and vinegar. Quarter and keep aside. Quarter the shallots and slice the onions.

Heat oil in a deep pan and add cumin seeds. When the seeds start crackling add the ginger-garlic paste, shallots and onion slices. Once the onions are soft add the red chilli powder, coriander powder, turmeric powder and salt. Stir fry for a few minutes and add the capsicum and the mushrooms. Mix well. When the mushrooms are cooked add tomato juliennes, coriander leaves and the lime juice. Mix gently and simmer for 3-4 minutes.

Serve hot with naan or roti.
